Nummas


Ingredients

Noc Chan
  • 3 hot red chilies, roughly chopped
  • 6 tablespoons sugar
  • 1 clove garlic, peeled and roughly chopped
  • 6 tablespoons lemon juice
  • 3 tablespoons fish sauce
  • 100ml coconut cream
Salad
  • 100g kingfish, sliced
  • 2 long red chilli, julienne
  • 2 long green chilli, julienne
  • ½ red onion, julienne
  • ½ coconut, julienne
  • 1lime, wedges

Method

1. For the Noc chan, place chillis, garlic and sugar in a mortar and pestle and pound to a paste. Add lemon juice and fish sauce and gently mix to combine. Transfer to a bowl along with the coconut cream and combine.

2. For the salad, add the sliced kingfish to the noc chan, stir to coat and leave to marinate in the fridge for 5–6 hours.

3. To serve, mix all the julienne vegetables, serve marinated fish in the bottom of glass, topped with julienne of vegetable. Garnish with a little bit more julienne, and serve with lime wedge.

Notes: Note: Plus 6 hours marinating time
