BEST DRESSED






When making a vinaigrette, choose the right oil as some supposedly healthy polyunsaturated ones aren’t as good as you might think.

Sunflower, safflower, corn and many other vegetable oils are high in omega-6 fatty acids and compete with omega-3 fatty acids, which in turn makes it harder for our body to absorb those heart-friendly omega-3s.

Ideally we should have twice as much omega-6 as we do 3, a ratio of two to one but the increased use of vegetable oils and our low consumption of oily fish has seen the balance shift dramatically. Our average ratio is now an unhealthy eight to one. That’s bad news on two fronts because not only does omega-6 block omega-3, high levels of omega-6 are also associated with inflammation, a contributor to heart disease, diabetes and many other health problems.

Redress the balance by using an oil high in omega-3 such as rapeseed or flaxseed or, for a stronger flavour, walnut or sesame. Try olive oil which contains omega-9 and does not compete with 3.

Buttermilk Ranch Dressing







1/2 cup mayonnaise
1/2 cup buttermilk
1 1/2 tsp. dried parsley
1/4 tsp. kosher salt
1/4 tsp. onion powder
1/4 tsp. dried marjoram

In a small mixing bowl, whisk together all ingredients until well blended. Serve immediately or store covered in the refrigerator up to 3 days.

Buttermilk Blue Cheese Dressing







1/2 cup mayonnaise
2 cloves garlic, finely minced
2 tbsp. buttermilk powder
1 ½ tsp. fresh lemon juice
1/2 tsp. Worcestershire sauce
- kosher salt and coarsely ground black pepper, to taste
1-2 tbsp. water, as needed for desired consistency
1/2 cup Kowalski's Blue Cheese Crumbles

In a small mixing bowl, whisk together all ingredients, except water and cheese, until well blended; whisk in enough water to reach desired consistency. Fold in cheese and additional water, if needed. Serve immediately or store, covered, in the refrigerator up to 3 days.

Note: 1-2 tbsp. fresh buttermilk can be substituted for the buttermilk powder and water.

Ranch dressing







Salad berwarna putih susu ini sangat populer di Amerika. Dibuat dari buttermilk atau sour cream, bawang bombay, bawang putih, peterseli, paprika, dill, merica, dan biji mustard. Cocok juga untuk cocolan sayuran rebus karena rasanya yang asam gurih dan sedikit pedas.

Italian Dressing







Saus salad ini mempunyai rasa yang asam segar. Mirip vinaigrette namun bahannya terdiri dari air, cuka atau perasan lemon, minyak sayur, paprika cincang, gula atau sirup jagung, adas, dan garam. Bawang putih dan bawang bombay bisa juga dimasukkan untuk memperkuat rasa saus.

Vinaigrette







Dikenal juga dengan nama French Dressing. Merupakan campuran dari berbagai macam minyak seperti minyak kedelai, canola, zaitun, bunga matahari, safflower, kacang tanah, biji anggur, serta cuka. Terkadang, dicampur rempah-rempah dan sari buah.

Kurangi takaran lemak
Baliklah aturan yang mengatakan takaran 3 bagian minyak:1 bagian cuka. Gunakan 3 bagian cuka untuk 1 bagian minyak (misalnya dengan takaran sendok makan). Atau, minimal takaran minyak dan cuka sama, yakni untuk membuat satu porsi saus salad. Anda akan mendapatkan lebih banyak rasa dengan dressing yang minim dan mengurangi penggunaan lemak.

Segarkan sausSegarkan saus untuk dressing dengan menambahkan 2 sdm mentimun cincang yang dicampur ke dalam ¼ cangkir saus.

Saus rasa buah-buahan
Haluskan ¼ cangkir irisan buah musiman pilihan, seperti stroberi, 1 sdm minyak, dan 1 sdm cuka secara bersamaan untuk menghasilkan saus rasa buah dan mengandung sedikit minyak.

Saus beraroma bawang
Jika Anda kurang menyukai rasa buah atau sedang tidak membuat salad buah, gunakan satu bawang merah kecil yang dicincang dan (atau) satu siung bawang putih kecil yang dicincang ke dalam ¼ cangkir saus. Dengan rasa dan aroma yang kuat, Anda hanya akan memerlukan sedikit saus untuk salad Anda.

Cara Membuat Mayonaise


  • 2 btr kuning telur
  • 1/2 sdt garam
  • 290 ml minyak zaitun
  • 1 sdm air jeruk lemon/nipis
  • 1 sdt saus mustard
Cara Membuat Mayonaise
  • Kocok kuning telur, mustard, garam dengan mixer kecepatan rendah hingga lembut dan tercampur rata.
  • Tambahkan minyak zaitun setetes demi setetes
  • Biarkan dulu setiap tetes tercampur rata, baru masukkan tetes berikutnya
  • Jika adonan mayonaise sudah mengembang dan kaku, masukkan perasan air jeruk lemon
  • Kocok hingga tercampur rata dan adonan akan turun.
  • Jika adonan mayonaise terlalu kental, tambahkan saja 1-2 sdm air mendidih dan kocok hingga rata
  • Mayonaise siap digunakan

Walnut Oil and Chive Vinaigrette


A roasted nut oil can give your vinaigrette a mild, earthy flavor—a nice change from bland vegetable oil or sometimes-overpowering olive oil.

What to buy: We like the La Tourangelle brand of roasted nut oils like this walnut oil. Avoid brands that use refined nut oils—they don’t taste like the nuts they came from. Store nut oils in the refrigerator or freezer to prevent rancidity.

Game plan: If you’re making the dressing ahead of time, add the minced chives just before serving.
 
INGREDIENTS
  • 1/4 cup plus 1 tablespoon roasted walnut oil
  • 3 tablespoons grapeseed or canola oil
  • 3 tablespoons finely chopped fresh chives
  • 3 tablespoons white wine vinegar
  • 1 1/2 teaspoons Dijon mustard
  • Kosher salt
  • Freshly ground black pepper
INSTRUCTIONS
  1. Place walnut and grapeseed or canola oils in a small bowl or measuring cup.
  2. Place chives, vinegar, and mustard in a medium, nonreactive bowl and whisk to combine. Slowly drizzle in the oil mixture, whisking continuously, until all of the oil is incorporated. Season with salt and pepper to taste and serve.

Mexican Salad Dressing




As a follow up to my Mexican Food Fan post, here is a salad dressing for you! This has to be tthe easiest Mexican salad dressing ever in the history of Mexico!:) Here are the TWO things you need to make this
“couldn’t be easier” home made dressing!



Yes, seriously. That’s it.  Of course, home-made plain yogurt (Google it, cause I’m not there yet) and home-made salsa are best, but if you don’t have time for that, use an organic (or natural, no chemicals/hormones added) store-bought version of each of these. I do half and half to make my dressing, but use the ratio you prefer.  You could use sour cream if you don’t have plain yogurt.


Since we’re all trying to eat more vegetables (aka “salads”), this is one more way to give you some variety in the salads area (and encourage you to keep eating greens!). We like our Mexican Salad (sans shell) with seasoned grass-fed beef, raw milk white cheddar, plenty of veg including fresh cilantro, and this dressing. If you must have the shell, use organic corn chips or break an organic taco shell instead. The chips are smaller, and likely fewer ingredients than the giant taco salad shells I’ve seen. Let me know if you try this with other ingredients too. Ole!

Asda unveils ‘Snap and Squeeze’ salad dressing sachets




Asda has claimed to be the first UK retailer to unveil ‘Snap and Squeeze’ salad dressing sachets under its own label and as a multipack.




In a statement seen by PN, the retail giant said: “Snap and Squeeze packs were the perfect solution to our requirements.  The innovative opening method can be done with just one hand without the use of scissors, teeth or a knife.

“With your finger and thumb you bring both ends of the credit card sized rigid sachet together which breaks the seal and product is squeezed effortlessly out.

“The dressing can be creatively drizzled over the salad or squeezed at the side of the plate as a dip.  There is no mess and the squeezing motion ensures little residue or waste.”





Asda said that it has just launched a Caesar dressing, a honey and mustard, and a balsamic under its Chosen By You Brand.

It has selected a clear film over an opaque film for the flexible half of the pack to give, what it claims to be, great product visibility.

The multipacks were collated in a self-standing carton, with a window to keep that product visibility.

Asda said it is already looking to increase the range in terms of a flavour offering.  It is also looking to use them for other types of products.

Sweet Vidalia Onion Salad Dressing







Ingredients:
1/2 large vidalia onion
1/4 cup vegetable oil
6 tablespoons white vinegar
8 tablespoons granulated sugar
1-1/2 teaspoons ground dry mustard
1/4 teaspoon garlic powder
1/2 teaspoon celery seed
1/2 teaspoon salt or salt to taste
1/8 teaspoon ground black pepper or pepper to taste

Directions:
1) Slice 1/2 inch off both ends of onion. Pierce onion skin in several places with a sharp knife. Place onion in microwave-proof bowl. Add a tablespoon of water and microwave, covered, on HIGH power until soft, about 3 to 4 minutes. Set aside to cool.
2) When cooled, peel and place in food processor. Puree until smooth. Add oil, vinegar, sugar, mustard, garlic powder, celery seed, salt and pepper and process until smooth. Chill. Yield: 1-1/2 cups.

Don't Eat Salad with Fat Free Dressing Says Science


If you're using fat free dressing on your salad, you're doing it all wrong. According to scientists, you need to eat salad with fat-based dressings to get the most out of the veggies. Having no fat in your salad actually diminishes the benefit from eating vegetables.
This sounds a little crazy, right? But yes, even though fat free dressing has less calories than its fatty filled counterpart, you're not getting the full oomph you want when eating vegetables with skinny dressings. Researchers at Purdue University compared salad eating with dressing that had saturated fat, monounsaturated fat and polyunsaturated fat at three, eight and twenty grams of fat to find which was most effective and discovered that fat is a good thing. The Atlantic says:
Mario Ferruzzi, the lead author of the study and an associate professor of food science at Purdue, said that in order to get more from eating fruits and vegetables, they need to be paired correctly with fat-based dressings.

It turned out that dressing made with monounsaturated fat (olive and canola oil) were easily the most effective, needing the least amount of dressing to get the most amount of health-promoting carotenoids (carotenoids act as antioxidants in our bodies). Carotenoids are found in eating plant foods like vegetables and fruits so it makes sense that we'd want to get as much bang as we can when eating them. Using salad dressing with fat accomplishes that.
