Ingredients
- 10 slices ciabatta or other crusty bread
- Always Fresh Extra Virgin Olive Oil
- 50g rocket or salad greens, rinsed and dried
- 4 vine ripened tomatoes, roughly sliced
- 30g Always Fresh Pitted Kalamata Olives
- 60g marinated feta, sliced
- Sea salt and cracked black pepper
Method
Spray the bread slices with olive oil, then pan fry or char-grill until golden.
Toss with rocket leaves, tomatoes, olives and feta.
Place onto serving plates, drizzle with extra virgin olive oil and
season well with sea salt and freshly cracked pepper.
